Potential Anti-Sarcopenia Effect and Physicochemical and Functional Properties of Rice Protein Hydrolysate Prepared through High-Pressure Processing

Rice protein is a suitable alternative source for dairy in infant formulas on account of its unique nutrition and hypoallergenicity. was isolated through enzymatic hydrolysis (Alcalase, papain, bromelain, Flavourzyme®) combination with high-pressure processing (HPP) (400 MPa 15 min at 25 °C) to enhance functional properties broaden food applications. The effect the HPP-treated rice hydrolysate dexamethasone (DEX)-induced atrophy C2C12 myotubes also studied. length observed under light microscope, periodic acid Schiff staining. results showed that even though HPP treatment affected color resulting protein, content (3120.31 ± 42.15), branched chain amino (BCAA) (15.12 1.03), peptide (31.25 0.55), composition were significantly increased. Moreover, combined effectively overcame problem limited solubility water-holding capacity. produced exhibited higher free radical scavenging activity oxygen absorbance It alleviated DEX-induced muscle as indicated by increase myotube length. In short, not only limitations, but high functionality terms antioxidant therapeutic effects atrophy. potential use an ingredient foods nutraceutical industry.
